From April 15, 2022 the young Cheffe, Sophie Le Prado will be in residence at the Villa Figue Blanche. During your stay in our guest house, you can opt for an exclusive private dinner just for you. Sophie's cuisine is reflected in dishes where the vegetal is sublimated, where the meats and fish are magnified in perfect cooking and where the juices come to embellish a delicate connection with their depth. She is also passionate about fermentation, and makes homemade breads and brioches. It is rumored that her signature dessert is Paris Brest, a classic in which she excels with a house praline and an ultra light dough. With Villa Figue Blanche, she takes the bet to cook for an exceptional evening where she will put her talent at the service of the moment. We salute his daring!

Amuse bouche
Barigoule artichokes, chervil cream and blinis

Starters
Marinated mullet, apple and coriander virgin, lettuce and fried breadcrumbs
White asparagus, mousseline sauce and crispy egg

Main course
Poultry cooked in toasted hay, potato and parmesan gnocchi, peas and yellow wine cream

Dessert
Strawberry tart with red fruit jam,  whipped cream with marigold

Mignardise
Financier with brown butter and lemon

SOPHIE LE PRADO



Sophie Le Prado, a talented young chef. At 30, she already has a well-filled career in renowned French houses. After training at Ferrandi, she continued her apprenticeship at the Laurent under the orders of chef Alain Pegouret, where she acquired rigor and meticulous work in a gourmet restaurant. Then, she joined chef Alain Passard for two years at L’Arpège. The work of vegetables then takes on another dimension and she explores a new culinary vision. She then left to join Daniel Baratier, as chef de partie at Les Déserteurs, an opportunity to combine the rigor of the starred and unbridled bistronomic cuisine. With chef Antonin Bonnet, she confirmed her talent for 5 years, the Quinsou restaurant having won a Michelin star in 2017
